For this Chai
recipe you need
1 cup of milk
2 cups of water
1 tablespoon black tea leaves
1 tablespoon of raw cane sugar or another sugar
optional spices : seeds of green cardemom, freshly grounded
optional ginger, black pepper, cinnamon,...
In a saucepan, bring
the water & the spices to a boil.
When boiling add the milk.
Remove mixture from
the heat as soon as bubbles start to rise.
Stir in the tea leaves & the
Cover and allow to
steep for a few minutes.
Strain and serve.

If you let the tea
leaves boil in the water/milk mixture, like it
is all too often done in India, the tea becomes
much more difficult to digest because tannins
are released from the tea.
