For this
Rice recipe you need
1 cup rice
, washed and soaked
half cup boiled chick peas ( kabuli chana
)
half cup mixed vegetables , finely chopped
( french beans , carrots, peas , capsicum
, mushroom - u can choose 4 out of them
as per your convenience ..)
half cup onions chopped
half teaspoon garlic chopped
1 bay leaf
10 leaves mint washed and chopped
half teaspoon lemon juice
2 teaspoon oil
salt to taste
Rice
with Chickpeas and Vegetables
Recipe - Method
Heat oil in
a non-sticking pan and add onions, garlic,
bay leaf
Cook till the
onions are soft .
Add vegetables
, rice, 2 cups water, salt and cook on a
medium flame till the rice is partially
cooked.
Now add the
(previously boiled) chick peas, mint and
lemon juice, mix well and cook covered till
rice cooked
Serve hot
